Nan’s Favorite Refrigerator Pickles

My friend Nan’s favorite gift that I make for her are these refrigerator pickles and are super yummy and easy to make, they are adapted from Whole Foods Markets website but I have added some ingredients that I feel makes them even better.  They will keep for up to a month refrigerated… that is if they don’t get gobbled up first.

Ingredients:

2 lbs of small cucumbers

1 cup sugar

1 medium onion

3-6 serrano peppers, whole

1-2 red jalapeno peppers, whole

1 head of garlic

1 cup cider vinegar

1 cup white vinegar

4 tsp. salt

2 tsp. mustard seed

2 tsp. celery seed

1 tsp white peppercorns

Separate and clean the  garlic cloves and whack each with the side of your knife leaving them whole but slightly crushed.   Slice cucumbers and onions combine all vegetables in a large bowl and mix up.  In a medium sauce pan add the rest of the ingredients, stir over high heat just  until sugar dissolves, do not leave unattended.  Immediately pour the hot liquid over the cucumber mixture.  leave at room temperature for about an hour then refrigerate.  I like to store mine in the Lock & Lock plastic containers.

    Love, love, love them! There is nothing that Jody makes that my family doesn’t love, but these little jewels are my all time favorite!
