We have been making this recipe for twenty plus years and it is one of our family’s favorites. This Tamale Pie is a one pot wonder and great for a quick and hearty dinner.
Meat mixture:
1 lb ground beef or buffalo (90% lean)
1 cup chopped yellow onion
1 tsp. salt
4 tsp. chili powder
1 tsp. pepper
2 tsp. garlic powder
1 Tbs. sugar
1-16 ounce can of tomato sauce
1/2 cup sliced black olives
1 cup grated sharp cheddar cheese
Cornbread topping:
I rarely use boxed anything but in this case I make an exception you really can’t beat Jiffy brand corn muffin mix.
1 box Jiffy corn muffin mix
1 egg
1/3 cup milk
1/2 cup shredded sharp cheddar cheese
Mix the corn muffin mix egg and milk, once combined stir in the 1/2 cup of cheese
Directions:
Brown ground meat and onion in a large skillet I use my 12 inch cast iron skillet. Do not drain, once browned add spices, tomato sauce, olives, and corn. Bring to a boil and simmer for 20 minutes uncovered to thicken. Taste and adjust salt and pepper to your liking. Make cornbread topping and evenly spoon over the top gently spreading out. Bake uncovered in 350 degree oven for 35 to 40 minutes.
