Creamy Macaroni and Cheese with Ham

When I think of comfort food, macaroni and cheese always comes to mind. There are so many new plays on the traditional mac n cheese, like mac and cheese with lobster, which is delicious by the way. When I am in New York in the Adirondack visiting my daughter, there is this wonderful restaurant in North Creek, called Basil and Wick's that serves the most delicious mac and cheese with lobster. If you are ever in the area, you have to stop in and have some. Well any who, I was putting together a list of food to have for my Blog Launch and this recipe came to mind. It is delicious and super easy to make. I hope you enjoy it as much as I have. 

Creamy Macaroni and Cheese with Ham

Ingredients

  • 2 tablespoons butter
  • 1 cup cottage cheese (not low fat)
  • 2 cups milk (not skim)
  • 1 teaspoon dry mustard
  • Pinch cayenne pepper
  • Pinch fresh grated nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 pound extra sharp cheddar cheese, grated
  • 1/2 pound elbow pasta, uncooked
  • 2 cups baked ham, small cubes

Heat oven to 375 degrees and position an oven rack in middle of oven. Use 1 tablespoon butter to butter a 9 inch casserole dish.

In a blender, puree cottage cheese, milk, mustard, cayenne, nutmeg, salt and pepper together. Reserve 1/2 cup grated cheese for topping. In a large bowl, combine remaining grated cheese, milk mixture and uncooked pasta. Pour into prepared casserole dish, cover tightly with foil and bake 30 minutes.

Uncover the pan, add cubed ham, stir gently, sprinkle remaining cheese and dot with remaining butter. Bake uncovered for 30 more minutes or until the top is browned. Let cool at least 15 minutes before serving.
